PROCESSING PROCESS
- Crispy dried pork belly is processed by my family very carefully, the skin and meat are crispy, the fat is dried and pressed to be crispy and spongy, so it is not greasy at all. Each piece of pork belly is super crispy, spongy, not hard.
- The thinly sliced pork belly is fried until crispy, the excess fat is centrifuged and then dipped in fish sauce, garlic and chili to create a golden, crispy, fatty crust.
